 In Weekly Meal Plan
Monday
AM Snack: pineapple and mozzarella string cheese
Lunch:  vegetable lasagna (zucchini, tomatoes, carrots, mozzarella, Parmesan, lasagna pasta)
PM Snack:  animal crackers
Children’s work:  work on layering ingredients for lasagna
Tuesday
AM Snack:  fruit salad (cantaloupe, pineapple,  raisins), bagel half w/peanut butter and honey
Lunch:  migas (corn tortillas, black and pinto beans, scrambled eggs), baby spinach w/ homemade vinaigrette
PM Snack:  pretzels
Children’s work:  toast bagel, spread with peanut butter/honey, help chop fruit or make vinaigrette
Wednesday
AM Snack: granola w/ vanilla almond milk
Lunch:  barbecue chicken thighs over buttered rice w/ carrots
PM Snack:  apple
Children’s work:  measure out rice and water for steamers, chop carrots
Thursday
AM Snack:  carrots and cucumbers with hummus or homemade ranch dip (varies by class), gluten free table crackers
Lunch: homemade banana bread, vanilla yogurt
PM Snack:  craisins
Children’s work:  make dip for am snack or work on baking banana bread for lunch
Friday
AM Snack:  cheddar cheese cubes, apple slices
Lunch:  pasta w/ homemade basil/parsley pesto, broccoli
PM Snack:  tortilla chips
Children’s work:  tear/chop the basil and parsley to make pesto
