You have asked and finally we have answered! Visit the blog every Friday for the weekly “Farm Favorite” recipe. The Tomato Basil soup has been re-named pizza soup by the children. As pictured it was served with a piece of our homemade bread and melted cheese but in the past we have served it with fresh mozzarella balls on top and homemade breadsticks which melts in the bowl making the perfect “Pizza Soup”. We are trying to scale back our recipes to a family portion as opposed to our batch cooking so test these recipes and please give us your feedback in the comments.

Tomato Basil aka “Pizza Soup”
Servings 4

1 T Olive Oil
1 Onion, diced
2-3 Zuchinni, chopped
2 (16oz) cans Diced Tomato
1/4c Basil, Chopped
1t Sea Salt
1t Garlic Powder
Fresh Mozzarella for Garnish

Add Olive Oil to Stockpot. Sauté Onion and Zuchinni until soft. Add Diced Tomatoes, Basil, Salt and Garlic Powder. Pulse with Immersion Blender until Soup is coarse but not puréed. (notice all the veggie bits in photo) Add warm water if necessary for desired consistency. Bring soup to a boil on med-high heat then reduce and let simmer for 15-20 minutes. Ladle into serving bowls and garnish w/ Fresh Mozzarella.

Timesaving Tip: Substitute a nice jar of Tomato Basil Pasta Sauce for the Diced Tomato, Basil and spices.
