Need a portable, or quick breakfast??–try an “egg in a hole”.


Ingredients:
butter
sliced bread
egg
salt/pepper to taste
Lay a slice of bread on a cutting board and using a cup or round cookie cutter, cut a circle out of the bread. In a skillet, melt a large pat of butter over medium high heat. Place the slice of bread and the circle from the cutter in the skillet and crack an egg into the center of the bread slice. Salt and pepper lightly. After approximately 30 seconds, or when bottom of the egg appears set, gently flip the slice of bread/egg to the second side. Turn the toast round as well. Allow to cook until bottom is set, approximately another 30 seconds for a soft yolk, longer for a hard yolk. My children like a soft yolk and like to “pop” the yolk with a fork and dip the toast round into the “yellow sauce”.
